Anytime Meatballs

It’s New Year’s Eve tonight, and these delicious little nuggets will be on my menu, making themselves at home in a crockpot full of cheese sauce.?

?This recipe is my way of making meatballs. ?I tried as hard as I could to get the texture and flavor of store bought meatballs, because while I love the product, I don’t really like the price, and I don’t really know what’s in there either.

Making them myself I get all the scrumptious flavor and I know what’s in them.? That’s important you know.

I call these “Anytime Meatballs” because just by changing up a couple ingredients, you can have Italian meatballs (like the ones shown) for spaghetti or stromboli.? This is just a really nice, versatile meatball recipe that’s very flavorful.? Oh, and kids love them.? There are no wierd pieces or chunks, and no green things.? So yes, quite kid friendly.? My little man loves them, as does my niece, and my picky nephew.? Believe me, if the picky nephew will eat them, any kid will eat them.

Pan frying these in butter gives them an amazing flavor.

Nice texture too, they hold up well and don’t fall apart.

Anytime Meatballs

Ingredients:

2 lbs. lean ground beef

2 Cups bread crumbs

2 eggs

1/2 Tbsp. salt

1 tsp. pepper

3 Tbsp. Worcestershire Sauce

1 Cup?ketchup (if you don’t like ketchup, you can use 1 Cup of evaporated milk.? This is a VERY delicious option.)

1 stick of butter (4 oz.)

Directions

Unwrap butter and place in a large skillet.? Set aside. Combine all remaining?ingredients??in a large mixing bowl until well blended.? Using a medium cookie scoop for large meatballs, or a small cookie scoop for small meatballs (like the ones sold in stores), shape each level scoop of meat mixture into balls.? Melt the stick of butter in large skillet, and brown meatballs in melted butter over medium heat until no longer pink in the center, about12 minutes.? Makes approximately?40 large meatballs, or 60 small meatballs.

For Italian Meatballs:?Add 2 tsp. crushed garlic and replace regular bread crumbs with 2 Cups of Italian bread crumbs, 1 lb. of hamburger with Italian sausage, and 1 Cup?ketchup with 1 Cup of spaghetti sauce.

For Swedish Meatballs :? Replace ketchup with 1 Cup evaporated milk, add 1 tsp. onion powder and 1/2 tsp. nutmeg.

These really freeze well, so make up a large enough batch that you can make all three kinds.? You’ll save yourself a ton of time on future meals, and your friends, family and guests will think you worked extra hard to make a great meal just for them.? Only we’ll know just how easy it was.? But that’s our little secret.
