Cupcake Queen?

I’m starting to feel like it! I made another batch of cupcakes yesterday, this time for my niece Jessica’s 15th birthday.? I used the Wilton jumbo muffin tins, which make a finished product that’s 2.5 times larger than a regular cupcake.? These are very fun and festive for birthday parties or gifts…people’s eye’s just pop when they see the size of them.?

I took a few pictures to show you too…I used Wilton tip #1 M for a simple textured swirl of frosting and then topped them with Wilton’s Jumbo Daisy sprinkles.? I’m a big fan of the jumbo sprinkles line…they’re just so cute and fun.? I also thought I would share my frosting recipe with you…it’s perfect for cake decorating, cookies and more and is so versatile for flavoring.? This recipe comes from my mother Nancy and everyone who’s ever tried it loves it, you might too!? For now I will post it below, but will make a downloadable recipe card in the future so you can print it off for your recipe box at home.

Mom’s Fabulous Cake Decorator Frosting

  • 2 lbs. powdered (confectioner’s) sugar
  • 1 C. white Crisco
  • 1/4 C. Cremora (you can use any brand)
  • 1/4 tsp. salt
  • 1/2 C.?boiling??water
  • 1 tsp. vanilla
  • 1 tsp. almond flavoring

Pour powdered sugar in a large mixing bowl (I use my stand mixer.) Add white Crisco, and make a well in the center of it.? Add Cremora and salt to the well.? Slowly pour 1/2 C. of boiling water over the dry ingredients in the Crisco well.? Add vanilla and almond flavorings and mix on low speed for two minutes until combined, and then whip on high speed for five to ten minutes until light and fluffy.? This recipe makes enough to generously frost about 3 dozen cupcakes, or a double layer cake, or several dozen cookies.?

The flavoring can be altered to suit your taste with any flavoring or extracts.? Try using LorAnn flavoring oils or extracts for someone absolutely wonderful icing flavors.

?My brother called and asked me to make a birthday cake for his girlfriend’s son’s birthday for the 27th of this month, so I’ll be dreaming up ideas for that too.? Maybe I’ll make some cupcakes:P
