?I made a batch of the yummiest, most cinnamony muffins ever today using this mix?and Baker’s Cinnamon Filling, both from King Arthur Flour.?
I prepared the mix according to the directions, along with 1 cup of the Baker’s Cinnamon Filling.? Using my square muffin tin?lined with pretty autumn leaf cupcake liners, ?I layered the prepared batter first, the cinnamon filling, batter again and topped it with a home made streusel (recipe follows).? I baked them for 25 minutes at 375 degrees, and they came out absolutely perfect.
In the photos, I used Vintage Journal Spots #2 by Kate Pertiet? for the journaling.? Check out her store at Designer Digitals, she has some wonderful products, almost as yummy as my muffins!

Streusel Topping

1/4 C. Flour

1/3 C. Sugar

2 TBSP. Butter softened
Combine ingredients in a small bowl with a fork or pastry blender until crumbly.? Add to muffins as desired and bake.
Stacey’s Notes: The only thing I would do differently next time is add a drizzle of really thick glaze to the tops of these.? That would make them perfect.
