Autumn Brownie Pops
After baking brownies from a boxed mix last night (I mixed up a double batch and baked them in a half sheet pan), I cut out 24 coffin shaped brownies that I put in the freezer to decorate later this week.? This left me with nearly half a pan of wasted brownie…gasp…sputter…wasted brownie?! Nevah!?
After reading around the internet and poring over my Wilton Brownie Fun Book, I decided to make autumn themed brownie pops.? This mission would accomplish three things.? It would use up the left over brownies I had; it would use up some of my GI-normous Halloween sprinkles collection, and it would give me another thing to sell at the benefit bake sale for my Aunt Linda.
I had put the remains of my coffin fest in a Ziploc bag last night…this morning, I mashed the remains together to get a doughy consistency, and then divided the “dough” into twelve portions.? I rolled them into rather large balls and placed them on a parchment paper lined cookie sheet.? I used the only sucker sticks I had on hand (short ones) and inserted one into each ball of brownie.?
I stuck the pan in the fridge for a couple of hours to let them get firm enough to dip.? I would have put them in the freezer, but my chest freezer is full to the top with baked goods I made this past weekend.
In the meantime, I did some housework, giving the brownie balls time to firm up.? Then?I melted a package of Reese’s peanut butter chips, placed in a large coffee mug, in the microwave.? I also put the sprinkles into a tiny little bowl so that they mounded high and were easy to roll the pops in.?
Taking one pop at a time out of the refrigerator, I dipped it in the melted peanut butter chips and rolled it in the sprinkles.? Then I put it back and took out another one.? Wash, rinse, repeat.? Pretty soon they were all done.? If I had used the freezer, I would have let them all sit out on the counter as I was dipping and rolling, because they wouldn’t have warmed up much.?
And here are the results…not bad for my first attempt.? I’m sure this is a process that I will refine until I’m an expert, these little suckers are really good.
I got a dozen from the scraps of two brownie mixes, the 9 by 13 pan size box.
Don’t these things just look YUMMO? My blood sugar is going up just looking.
It’s calling to me…eat me…try me…just…one…bite!

Oh.? These are heavenly.? Very, very rich.? And very, very autumny.? I think they might be a hit at the bake sale.? And I can’t wait to see what other kinds of brownie pops I can make.? White chocolate peppermint comes to mind for Christmas, just for starters.

Oh yum… I love brownies. I wasn’t planning on making coffin brownies, though… do you think I could just mash an entire pan into brownie pops?
My favourite brownie trick is to make an icing sugar, milk & peanut butter spread (I don’t have a ratio – just keep adding together until you get a creamy consistency, but definitely light on the milk) and then drizzle melted chocolate on top.

I just did shapes for the bake sale, given that it was so close to Halloween. Of course you can mash a whole pan of brownies up and make these, that’s the original idea I suppose, I just found it convenient for leftovers.
We are two of a kind when it comes to peanut butter frosting. Oh my word I love that stuff. My mother makes the most awesome spice cake with peanut butter frosting, it’s a very requested birthday cake amongst us kids and my dad. Love it!
