Peanut Butter Bon Bons

I can’t lay claim to this wonderful recipe.  It belongs to my good friends, the Keebler Elves.  It’s found on the back of the graham cracker crumb box.  The Keebler website is really fun to visit.  They have an awesome recipe section you should totally check out.  It doesn’t however, have this recipe.

And you will want this recipe.  I promise.

 Because this recipe makes the most delicious bites of peanut butter goodness.

 They aren’t buckeye balls.  Those are a horse of a different color.

Some dipped in milk chocolate, some dipped in white chocolate.  All topped with a gorgeous little sprinkle of Holly Berry Mix.  But more about the Holly Berry Mix later.

Okay…back to that Holly Berry Sprinkles?Mix.  Remember the product review I did of the Kellogg’s Rice Krispy Holiday House Kit?  Well, the good folks at Brand Castle (manufacturers of the kit) contacted me about it.  They graciously sent Evan and I a gift of another Kellogg’s Rice Krispie Kit…and get this…it’s SNOWMEN!!! I was sooo excited.  When the package came in the mail, I was not expecting this:

I did a happy dance, I was so thrilled.  I think they could see me smiling all the way out at my best friend’s house in California.  Surely Amy (the sweet lady that emailed me from Brand Castle) had seen that I am a sprinkle addict? Brand Castle made these fabulous sprinkles for Target this year. Wow!  I was totally enabled.  And inspired.  So I’ve found a decorating purpose for all four jars this holiday.  You’ll be seeing how I use these here, of course.

This is the Kellogg’s Rice Krispie Snowman Kit she sent.  Is this not the coolest thing  I cannot wait to make it with Evan.  We’re going to wait till after Christmas, because it’s something to look forward to in the month of January.

I am a sucker for stationery. Especially super cute food themed stationery ? Isn’t this just awesome? Amy you are a lucky girl to get to use fun stuff like this!  A great big thank you to Brand Castle for the wonderful gifts, you definitely made our Christmas season cheery!  This company offers a very large selection of awesome kits for kids, you can check them out here.  I love the Kellogg’s Rice Krispie Dinosaur Kit and the Crayola Kits for every day.  I think I have as much fun as Evan does with these.

Graham and Peanut Butter Bon Bons

Ingredients:

1 1/2 C. crisp rice cereal

1 1/4 C. peanut butter

1 C. graham cracker crumbs

1/2 C. powdered sugar

12 oz. white or dark confectioner’s coating

Instructions:

1. In a large bowl stir together cereal, peanut butter, graham crumbs and powdered sugar  Refrigerate for one hour.

2. Shape crumb mixture into balls, using one level tablespoon for each.

3. In a small saucepan over low heat, melt confectioner’s coating.  Dip each ball in coating, letting the excess drip off.  Place on wax paper.  Refrigerate at least 20 minutes or until set.  Makes 44 pieces.

Stacey’s Notes:  I do not refrigerate the crumb mixture for an hour before shaping.  I shape first, then pop the cookie sheets with the balls on them in the fridge for an hour.  This is because using your hands to shape the balls warms up the crumb mixture. I do not confectioner’s coating either. I use chocolate chips, or white chips, thinned down with two TBSP. of grated paraffin wax. If you’re really choosy and can afford to do so, cocoa butter can also be used, as can Crisco/shortening. I tend to do it the old fashioned way.
