Soft and Chewy Ginger Cookies
After searching around the internet for a recipe to make chewy ginger cookies, I finally settled for the recipe on the back of my bottle of Grandma’s Molasses.? The one that I found on AllRecipes.com was the one I was going to go with originally, until I noticed that all the person who submitted did was tweak the amount of spices from this recipe and submit it.? I thought I’d go with the original.? If you go to the Grandma’s Molasses website, you’ll find recipes for everything from barbeque sauce to gingerbread, but oddly, this cookie recipe is missing.
I made a double batch of these, and rolled them in coarse grain sugar.??Bursting with Christmas flavor, these cookies?are crispy on the outside and soft and chewy on the inside.? I’ll be including them in my mix for the cookie exchange I am hosting on Friday, I think both kids and adults will enjoy them.
Oooh.? Don’t these just about scream ‘Old Fashioned?Christmas’? I should probably use more props, but I want the cookies to speak for themselves.

Soft and Chewy Ginger Cookies
Ingredients:
3/4 C. softened shortening
1 C. light brown sugar, packed
1 egg
1/4 C. molasses
2 1/4 C. flour
2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. ginger
Directions:
Mix shortening, sugar, egg and molasses.? Stir in remaining ingredients.? Chill dough for one hour.? Heat oven to 375 degrees.? Roll dough into balls the size of walnuts, dip tops in sugar. Place sugared side up on greased baking sheet.? Sprinkle cookies with 2–3 drops of water each for a crackled surface.? Bake 10-12 minutes.? Makes four dozen.
Stacey’s Notes: I copied this recipe exactly as written on the back of the bottle.? I rolled the whole dough ball in sugar, not just the top half.? I also used parchment paper on my baking sheets, I never grease my cookie sheets, ever.? In my gas oven, I baked the cookies for just ten minutes and they were perfect.? The water thing really does work, I tried it.

They look like Gingersnap cookies. Mmm, now I want gingersnap cookies… Don’t you just LOVE those big sugar crystals! Happy Baking lady!!
Well, I tried them and failed — but I’ll attribute that to one of two factors: Lack of brown sugar (sub’ed molasses and white) or, the more likely culprit, no eggs, because my wife is allergic to them and I wanted her to enjoy them as well. They turned out flat as pancakes and pretty greasy, so clearly they need the eggs at least to survive. Caveat emptor.
The taste is pretty good, though, and I let Keston roll them in sugar with me. While he got more sugar on the floor and himself, he still had lots of fun.
