Peanut Butter Rice Krispie Treats
In the summertime, when it’s too hot to bake, I like to make treats that are fast, easy and don’t require using the oven. These treats are one of my favorites.
In fact, this is my favorite kind of Rice Krispie treat–I prefer them over the regular marshmallow recipe.
Peanut Butter Rice Krispie Treats
Ingredients
6 Cups Rice Krispies cereal (I use the name brand…after doing a side by side comparison with two different store brands, I can tell you there IS a difference.)
1 Cup Karo white corn syrup
1 Cup brown sugar (I use dark brown sugar)
1 Cup Peanut Butter
Directions
Spray a 9 by 13 inch pan with non stick cooking spray and set aside.
Combine corn syrup and brown sugar in a large sauce pan or dutch oven and cook over medium heat, stirring constantly until mixture starts to bubble.
Remove from heat and stir in peanut butter until well combined.
Add Rice Krispies cereal and stir until well coated.
With buttered hands, press into 9 by 13 inch pan.
Let sit at room temperature until firm, or if you can’t wait (like us!) pop them in the fridge for an hour.
Slice, serve and enjoy.
Makes 24 good size treats.

You can optionally drizzle melted chocolate over the top of these, many people prefer them this way. I like just the plain peanut butter, it keeps the bars from being too rich. Any way you serve them, they’re delicious. If you like peanut butter, you definitely want these in your arsenal of recipes.
