Caramel Apple Crisp Cups
I came across this recipe last week.
I adapted it just a wee bit by adding 3 Kraft Caramel Bits to each cup before putting the apple filling in.

This recipe makes about 4 dozen perfect, delicious mini apple crisps.
I made them for a dinner party I hosted last Saturday night, and they disappeared quite quickly.
Needless to say they were a big hit, especially with my dad, Uncle Dan and U. Dan’s brother in law.

Caramel Apple Crisp Cups
Ingredients:

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 24 cavity mini muffin pana.
- Mix apples, water, white sugar, and 3/4 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat and let cool.
- Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Spray mini muffin pan with nonstick cooking spray, wiping excess from the top of the pan with a paper towel. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place three caramel bits at the bottom of each crust. Place about 2 teaspoons of apple filling in the crust. (I used a small cookie scoop about 3/4 full.) Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes. ( I baked mine 20 minutes.)
Cool completely in pan before removing.
Makes 44-48 mini cups.
This recipe is just wonderful.
You could dress it up even further by adding chopped pecans, and drizzling caramel over the tops.
Served warm with vanilla ice cream, you won’t find a more surprisingly awesome autumn dessert.

These sound delicious! What are caramel bits? Australian supermarkets seem understocked on baking goodies. I can’t even find butterscotch or mint chips!
Julia, caramel bits are like chocolate chips, only they’re little tiny round balls of caramel. For the longest time, they didn’t have them in the U.S. either, and it seemed only my Canadian friends could get them. Let me tell you, I was so jealous! They started selling them in the U.S. probably 4 or 5 years ago. Kraft is the company that makes them.
