Pumpkin Pie Crunch Snack Mix

I took this recipe from the Chex™ website originally, but did my own twist on it, and substituted a different cereal for the wheat Chex™.

Thus I renamed the concoction “snack mix”, because I really can’t call it Chex Mix, although in my opinion, Chex Mix is universal, kind of like every facial tissue is a ‘Kleenex’.

I’ve been hankering after Chex Mix, but making the savory stuff is something I do after Thanksgiving.  It heralds the Christmas season for me.

This satisfied my urge to make Chex Mix, but is entirely appropriate for the Thanksgiving season.

I want to say that this recipe surprised and delighted me.  I wasn’t sure I was going to like it, to be honest.  I am a real savory Chex Mix™ junkie, and I was a bit apprehensive about a sweet mix.

Well let me put any worries you may have to rest.  This will knock your socks off.  I promise. 

Even my brother Tom, who doesn’t really like sweets, can’t stop munching on this stuff.  Everytime he comes over, he heads right for the two gallon bag I store this in.

 

Pumpkin Pie Crunch Snack Mix

(adapted from the Chex Mix website)

2 Cups Honey Nut Chex™ cereal

2 Cups Cinnamon Chex™ cereal

2 Cups Maple Brown Sugar Life™ cereal

8 oz. pecan halves

1 Cup Cinnamon Graham Goldfish

1/4 Cup butter, melted

1 Tbsp. vanilla

1/4 Cup brown sugar, packed

1 Tbsp. pumpkin pie spice

Directions:

Preheat oven to 275 degrees.

Combine cereals, nuts and graham cracker goldfish in a large mixing bowl and set aside.

In a small bowl, combine brown sugar and pumpkin pie spice until well mixed, and set aside.

Melt 1/4 Cup butter in a microwave safe container (I use a 2 Cup glass measuring cup, because I can use it to pour on the butter mixture.).

Add vanilla and mix well.

Pour butter/vanilla mixture over cereal mixture and toss to coat well. 

Sprinkle brown sugar/pumpkin pie spice mixture evenly over coated cereal mixture and toss well to evenly coat.

Spread coated mixture onto a parchment paper lined cookie sheet.

Bake for 15 minutes, remove from oven and stir well.

Return to oven for another 15 minutes.

Remove from oven and spread over paper towels to cool.
