Cheeseburger Bake

This recipe is something I came up with a long time ago, based on another dish my mom made.

It’s a hot, hearty, delicious meal that’s quick to fix.

Very forgiving and easily adaptable to suit your family’s tastes, it’s a go-to meal for me on busy days.

It also freezes and reheats extremely well.

Cheeseburger Bake

Ingredients

For the Crust:

2 1/2 Cups Bisquick or Jiffy Mix

1 Cup Milk

1 Stick Cold Butter, half wrapped, for use after baking

For the Filling:

1 1/2 lbs. ground beef, cooked and drained

1/2 Cup onion, finely chopped (or, as I have to do, 2 tsps. onion powder)

Salt and pepper to taste

1 can Cheddar Cheese Soup

1 soup can milk

1 cup frozen mixed vegetables, optional (I don’t use this)

6 slices American cheese, for topping

Directions

Preheat oven to 375 degrees.

Coat a 9 by 13 with nonstick cooking spray and set aside.

In a medium size bowl, combine biscuit mix and 1 cup milk. 

Dough will be pliable and a bit sticky.  Butter your hands and press the dough into the prepared 9 x 13 pan.  Set aside.

In a medium skillet, brown ground beef, adding onion or onion powder, salt and pepper. 

When cooked thoroughly, drain and add back to pan.

Add cheddar cheese soup, soup can of milk.   Stir well until combined.

Add and combine optional vegetables.

Spread meat mixture over the prepared biscuit mixture to within a half inch of the pan, leaving a narrow crust visible.

Bake for 30 minutes, or until the biscuit crust is golden brown and the meat topping is bubbly. 

Remove pan from oven and top with cheese slices, arranging them in two rows of three slices each.

Return to oven for 2 to 3 minutes–just enough time for the cheese slices to melt and bubble slightly.

Remove from oven, and using a cold stick of butter, run the butter around the crust edge slowly, letting the melted butter seep down the sides of the crust.

Makes 6 large or 12 small servings.

I have also added a cup of finely shredded cojack or sharp cheddar to the biscuit dough for extra cheesy flavor.  I don’t do this all the time, but it’s nice once in a while.  Try garnishing with your favorite cheeseburger toppings…ketchup, mustard, relish or pickles and enjoy!
