Oatmeal Toffee Cookies

These cookies are not show stoppers in appearance, but they have a rich, buttery flavor that goes great with a cup of coffee or hot tea on a cold, wintery day.

They’re a “comfort cookie”, and one of Little Man’s favorites.

This recipe comes from the kitchen of Cindy Muszytowski, my mom’s across the street neighbor.  Thanks for sharing it with our family Cindy, we all love it!

Oatmeal Toffee Cookies

Ingredients

1 C. Shortening

1 C. sugar

1/2 C. brown sugar

2 eggs

1 tsp. vanilla

2 C. flour

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

2 1/2 C. oatmeal

1/2 C. chopped nuts

1 pkg. toffee bits (I used Heath™ Butter Brickle bits without chocolate)

Directions

Preheat oven to 375 degrees. 

Cream together shortening and sugars.

Add eggs and vanilla, incorporating well.

In a seperate, medium size bowl, blend flour, baking soda, cinnamon and salt. 

Add to creamed mixture and mix well. 

Stir in oats, toffee bits and nuts.

Bake for 10-12 minutes on a parchment paper lined cookie sheet.

Let stand on cookie sheet for 5 minutes after removing from oven.

Transfer to a wire cookie rack to cool completely.

Makes approximately 5 dozen cookies.

These are a cookie that belong in every recipe file because they have a flavor that will be universally liked by everyone, young and old.  Perfect for potlucks, cookie sales and after church coffee.  Hope you enjoy these as much as we do!
