Mom’s Chocolate Chip Cookies

I have tried many chocolate chip recipes over the years, but seriously, this recipe makes the best ones I have ever had.  Just the right amount of thickness and the perfect texture.  One batch makes 39-40 large cookies (portioned using a large cookie scoop).  The best part is that they are only FOUR Weight Watcher’s Points Plus™!  It’s like having the best of both worlds…rich, decadent yumminess incorporated into your weight loss program.

Mom’s Chocolate Chip Cookies

Ingredients

3 Cups flour

1 1/2 heaping tsps. baking soda

1 tsp. salt

1 C. butter flavored Crisco

3/4 C. white sugar

3/4 C. brown sugar, firmly packed

1 1/2 tsp. vanilla

1/2 tsp. almond extract (I use butter extract, I don’t care for almond as much)

2 eggs

1 package chocolate chips

Directions

Preheat oven to 375. 

Combine shortening and sugars in a stand mixer or large mixing bowl with a hand mixer until well blended.

Add eggs, 1 at a time, beating after each addition.  Add vanilla and almond and let stand for five minutes.

Line baking sheets with parchment paper while you wait.

Add one cup of flour to shortening/sugar/egg mixture and beat well.  Add chips, and remaining 2 cups of flour right on top of the chips.   

Beat well until all flour is incorporated.

Place on parchment lined cookie sheets with a large cookie scoop.

Bake 9-12 minutes, depending on the size of cookie scoop you use.  Remove from oven when edges are golden.

Makes 39-40 cookies, 4 Weight Watcher’s Points Plus™ each.

Go ahead and make a batch…it won’t last long!

    Oh my Goodness. These were DIVINE. I didn’t have Butter Extract, like you suggested, or Almond Extract like the recipe called for. However, I did have Molly McButter Flakes that I use for my B&C Shortbread cookies so I added 1 tsp of that and the result was delicious!
