This is the third recipe in the trio I posted to Face Book the other day.  I loved these, but I would really doctor them the way I did in my notes.  It made for very coconut-y flavored cookies.  My friend Terry made these for a church function and they didn’t quite get the raves that the orange drop cookies did.

Coconut Mounds Cookies

Ingredients

1/2 C. butter, softened

1 C. sugar

1 egg, beaten

1 tsp. vanilla

1 1/2 C. all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1 C. sweetened flake coconut

Directions

Blend together butter and sugar.  Add egg and vanilla; mix well.  In a separate bowl, sift together flour, baking powder and salt.  Stir flour mixture into butter mixture; fold in coconut.  Drop by heaping teaspoonsful onto greased baking sheets.  Bake at 350 degrees for about 10 minutes, until very lightly golden.  Makes about 3 dozen.

Stacey’s Notes: I ended up using baking SODA by mistake, but these still turned out excellent.  The flavor is fantastic.  I also added 1/2 tsp. coconut extract and 1/2 tsp. of butter extract to the dough, as well as an extra cup of coconut.  These are a definite winner!  I think they would be really good drizzled with some melted dark chocolate as well.
