Orange Drop Cookies
I posted these and two other recipes as ‘notes’ on Facebook last weekend when I went on my rainy day baking spree. Since not everyone who reads my blog is on my Facebook, I decided I’d post them here too. These cookies are light and refreshing with a nice burst of orange flavor.
Orange Drop Cookies
Ingredients
2/3 C. shortening
3/4 C. sugar
1 egg, beaten
1/2 C. orange juice
2 Tbsp. orange zest
2 C. all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Directions
Blend shortening, sugar and egg thoroughly. Stir in orange juice and zest. In a separate bowl, mix remaining ingredients; add to shortening mixture. Mix well and drop by rounded teaspoonfuls about 2 inches apart on an ungreased or parchment lined cookie sheet. Bake at 350 for 8 to 10 minutes, until delicately golden on the edges. Cool; frost with Orange Icing. Makes 4 Dozen
Orange Icing
2 1/2 Tbsp. butter, softened
1 1/2 C. powdered sugar
1 1/2 Tbsp. orange juice
1 tsp. orange zest
Blend butter and sugar together. Stir in orange juice and zest.
Stacey’s Notes I used fresh squeezed orange juice and frest grated zest. This imparts a very fresh flavor to these cookies. I also did not get 4 dozen. I got three dozen.
Each cookie(from a 3 dozen batch)=3 Weight Watchers P+.
