Fiesta Party Mix

I make this delicious nut-free party mix at the holidays, but it would be good any time of year.  It’s a nice alternative to the traditional party mix that has mixed nuts and pretzels in it.

Fiesta Party Mix

4 1/2 C. Rice Chex

4 1/2 C. Corn Chex

1 1/2 C. Chili Cheese Fritos

1 1/2 C. Cheezits

1 stick butter, melted

1 tsp. chili powder

1 tsp. Frank’s Hot Sauce (I like the Buffalo flavor)

1 tsp. taco seasoning

1/2 tsp. garlic powder

1/4 tsp. onion powder

1/3 C. Parmesan cheese

Preheat oven to 250 degrees.  In a large bowl, combine cereals, Fritos and Cheezits.  Melt butter in a microwave safe container (I use a 2 cup glass pyrex measuring cup).  Add all remaining seasonings except Parmesan cheese to melted butter and mix well.  Pour butter and spice mixture over the cereal mixture, tossing well to coat.  Transfer mixture to a roasting pan or a cookie sheet with raised sides and bake for 20 minutes.  Remove from oven and sprinkle with 1/3 C. parmesan cheese, stirring to coat and distribute cheese.  Bake for another 20 minutes.  Remove from oven, stir.  Return to oven for another 20 minutes.  Remove from oven and cool mix on paper towels.  Store in a 1 gallon container.  Makes 12 servings, 1 cup each.

This is a fantastic snack to serve at New Year’s Eve festivities, it goes so well with every kind of beverage that you’ll be serving.
