Cheddar & Bacon Waffles

I made my first attempt at a savory waffle yesterday.  I made Cheddar & Bacon Waffles, and they turned out great!  Lighter than eating a muffin, these are a nice change of pace from the traditional syrup drench confections that waffles usually are.  I added butter and sprinkled a bit of shredded extra sharp cheddar and crumbled bacon on for garnish.  They made my house smell wonderful and they tasted as good as they looked.

Cheddar & Bacon Waffles

3 slices bacon, cooked and crumbled (reserve one of these slices for garnish)

1 1/4 C. all purpose flour

1 1/2 tsp. baking powder

1/8 tsp. salt

1 C. milk

1 egg

2 Tbsp. melted butter

1 1/2 C. finely shredded sharp cheddar cheese (reserve 1/2 C. for garnish)

In a medium mixing bowl, combine flour, baking powder and salt.  Add milk, egg and melted butter and whisk until smooth.  Add 1 C. finely shredded cheddar and 2 strips worth of cooked, crumbled bacon.  Stir to evenly distribute cheese and bacon.

Preheat waffle maker according to manufacturer’s directions and measure enough batter to fill.  If your waffle maker comes with a measuring cup, use it.  This is the best way to ensure consistent, even results with every waffle.

Keep waffles warm in a 250 degree oven until all are cooked.  Top with butter if desired and remaining half cup of cheese and crumbled bacon slice and serve.

Makes 3 savory waffles.

These can be made, frozen and reheated in the bagel slot of your toaster as well for a quick breakfast or snack on the go.
